Cambria
Eddie ‘Ed’ Grimes, 87, of Grant, Florida, and formerly of Cambria, Illinois, passed peacefully surrounded by his loving family on March 16, 2025, in Palm Bay, Florida.
He was born on July 28, 1937, in Cambria, Illinois, to William “Chick” Wilburn and Ethel Christine “Chris” (Tyner) Grimes. Ed married Joyce Ann Phillips, his beloved wife of 68 years.
Ed is survived by his wife, Joyce Grimes; daughters, Teresa Torchia (Jude), Lisa Grimes (Jim), and Jeanette McCowen (Wade); grandchildren, Jayd (Vanessa), Jaira, Chase, and Stevie; and two great-grandchildren.
He was preceded in death by his parents and his infant brother.
A lifelong baseball fan, Ed developed his passion for the game in his hometown of Cambria, where he starred on the local baseball team in Cambria/Carterville.
Ed and Joyce owned and operated Baskin-Robbins for 20 years, starting with their first one in Granite City. They later moved back to Southern Illinois, where they opened Baskin-Robbins at the University Mall in Carbondale. He and Joyce also owned Baskin-Robbins shops in Marion and on the strip in Carbondale, and they expanded their ventures to include Karmelkorn. Later, they ventured into business in Florida, opening Cutlery World in Melbourne.
Ed retired at the age of 54, and he and Joyce moved to Grant, Florida. In retirement, Ed enjoyed spending time with his wife and family, watching baseball, and tinkering around the house. The couple also spent most Sunday mornings worshiping the Lord at South Babcock Baptist Church in Palm Bay.
Ed wanted to come home one final time. Funeral services will be held at 4:00 p.m., Saturday, March 29, 2025, at Riggin-Pillatsch & Burke Funeral Home in Carterville, with Rev. R.H. Chitwood officiating. Burial will be in Blairsville Cemetery. Visitation will be from 2:00 to 4:00 p.m., Saturday, at the funeral home.
